Green Tunisian Salad:

Ingredients :

1 pepper, 2 small fresh tomatoes, 1 cucumber, 1/2 onion, crushed dry mint, salt, ground, 1 spoonful of vinegar, 2 spoonful of olive oilcuil, olive and  tuna fish for garnishing.

 Preparation :

    Wash and dry the fresh pepper and the tomatoes ; wash and peel the cucumber making sure it is sweet.

    Cut the ingredients into small pieces to give them a good look.

    Put the vinegar in a small bowel and add to it the olive oil , the salt, the ground pepper and the crushed mint and mix them together. Add the mixture to the salad and mix them altogether.

   You can add some olives and tuna fish to the dish before you serve it.

   Salad méchouia :

Ingredients :

4 peppers or capsicums or both, 5 tomatoes, garlic clove, lemon juice, salt, pepper, 2 spoonful of olive oil, tuna fish, caper, green or black olives.

  Preparation :

    Choose firm tomatoes and fresh peppers or capsicums; wash and dry them; heat the oven at 350 degrees.

Put the tomatoes and the peppers in a plate and insert it into the oven to roast for 30 minutes. Now half roasted, turn them over, add the garlic clove, and return the plate to the oven to roast until the vegetable peel start to blacken and becomes tender.

Well roasted, peel the tomatoes, pepper and garlic making sure not to peel out the pepper flesh. Then remove the seeds from the pepper.

Put the roasted vegetables in a MEHRES* or a mixer taking care not to crush the peppers, the tomatoes and garlic too much.

Empty the mixture into a small bowel and add two spoonful of olive oil, one spoonful of fresh lemon juice, salt, crushed pepper, and capers and mix them altogether.

    Put the mixture on a big plate, add some tuna and olives, place the plate in the refrigerator for 15 minutes or little more, and serve it cold.
